Breakfast Recipes


Godsey Granola  - high protein, lower carb granola

Dry Ingredients:
8 cups Old Fashioned Oats     
4 Tbsp Brown Sugar or 2 Tbsp Coconut Sugar (can be omitted)
1/4 tsp Sea Salt  
4 Tbsp Protein Powder (Vanilla)                      
1/4 cup Chopped Almonds
1/4 cup Chopped Cashews
Handful of Pumpkin Seeds and Sunflower Seeds
Handful of Dried Un-sweetened Coconut

Wet Ingredients:
1 cup 100% Maple Syrup
1-2 Tbsp dried Orange peel
4 Tbsp Water
9 Tbsp Vegetable or Canola Oil

Dried Fruit Choices: (all chopped)
4 Pitted Dates
10-15 Dried Cherries
5-10 Dehydrated Apple Slices
10-15 Dried Strawberry Slices
5-10 Dried Pineapples
Handful of Organic Raisins
1-2 Dried Mangoes


Directions:
Combine all Dry Ingredients and mix well. In another bowl combine all fruit choices and use scissors to chop.

Combine all Wet Ingredients into a small sauce pan and warm on low for 10-15min. Careful not to boil. Drizzle mixture over dry ingredients and mix well. You can clump pieces together with your fingers or just stir for a cereal texture.

Heat oven to 275 degrees with rack at middle position. Bake for 30min, stirring twice. Stir in fruit and bake till golden brown, stirring once, for about another 15 min. Let cool completely. (Granola can be stored in an airtight container for up to a month)

Bear Claw 
French Toast
with homemade Blackberry Raspberry Syrup

Ingredients:
 1 Baguette/French Bread (we buy the older dollar bread at the store) 
1/2 c. chopped oats
1/2 c. chopped nuts of your choice (I used pumpkin seeds, softer and full of magnesium)
2-4 Tbsps Sucanut (organic brown sugar, or organic white sugar)
6-8 organic large eggs, mixed 

Syrup Ingredients:
1 c. pureed fresh raspberries
1 c. pureed fresh blackberries
1/2 c. agave
1 tsp. lemon juice

Directions:
Heat electric skillet to 350 degrees and grease with organic coconut oil. Slice french toast into thick slices. Dip both sides into the mixed eggs & then both sides into a bowl with the oats, nuts, and, brown sugar (mixed together). Put onto skillet and loosely tent with foil. Brown both sides and serve. Makes 16 slices.

Syrup Directions:
Puree the berries, agave & lemon juice in a high powered blender for 3 minutes or until desired temperature. You can use a regular blender but you will need to strain out the seeds.

Variations: Puree 2 cups apples and add cinnamon to the oat mixture.
                    Chop apples finely and add to oat mixture.
