Lunch

Lunch is a toughy- usually a blah salad or carb city! Well I've been experimenting and here are some yummy power packed alternatives!

SW Nut and Seed Pate (from Robyn- Green Smoothie Girl (GSG), modified by Cameo)
Ingredients:
2 c. Sprouted Nuts (soaked for 24 hrs, change the water, rinse the nuts, 2x a day till sprouted)
1/2 c. Sun-dried Tomatoes w/oils
1/4 inch cut round of Lemon or Lime (including rind)
Juice of 1/2 a Lemon or Lime (plus 1/4-1/2 tsp. lemon zest, lime can be used also)
1-2 tsp. Southwest Seasoning (Vitamix has an amazing pre-made mix, or my other favorite is Okie Joe's Salsa- all the flavors they make are GREAT! Just increase amt to taste)
Parsley fresh or dried to taste
Olive Oil to desired thickness (about 4 Tbsp.)
Sea Salt to taste


Blend in high powered blender using the damper to push the ingredients through.
I transferred the pate to a bowl then mixed the salt to taste in. This is because the pate becomes really thick and I didn't want to over salt it. I also added the lemon zest in this way too.

Nuts you can use: Almonds, Macadamias, Pine Nuts, etc... Seeds you can use: Pumpkin, Sunflower, Sesame, etc... I used 1 cup soaked GROATS & 1 cup sprouted Almonds! So Yummy!
*Make sure you are using flavorings that don't have iodized salt or MSG (Monosodium Glutamate) :)

We had this pate in 100% Whole Wheat Pita Pockets (homemade, GSG recipe) with Peppered Turkey, fresh Spinach, Tomatoes and Avocados!
